Salmon with arugula capers and herbs


Salmon on arugula, peppers, parsley and capers is a light and healthy meal for all who would like to avoid carbohydrates.

Salmon with arugula, capers and herbs ingredients for 4 people

  • 600 g skinless salmon (4 fillets)
  • 200 g arugula
  • 2 tablespoons of olive oil
  • 2 teaspoons of salt
  • 1 large red bell pepper
  • 4 tablespoons of filed capers
  • 1 lemon
  • 4 tablespoons of parsley

Salmon with arugula, capers and herbs preparation

Wash cleaned salmon fillets under running water and dry with paper towel. In bigger pan pour olive oil, heat it and then place fillets in pan. Salt fillets, first on one side, after seven minutes of cooking and turn fillets and salt the other side. Bake for about eight minutes they get golden brown color.

Wash peppers, cut in half, remove seeds and clean it. Cut it into thin strips. Wash arugula, shake it well and spread evenly on the plates. On arugula add chopped peppers. Place one baked salmon fillet on each plate with arugula.

Wash and finely chop parsley. Sprinkle parsley on salmon fillets and then add a tablespoon of capers. Squeeze fillets and lemon and dress arugula with lemon juice.

Additional tips to prepare salmon with arugula, capers and herbs

For decoration you can use a slice of lemon and parsley spring.
