When you do not know, what to serve for appetizer, but you would love to impress your guests is terrine perfect and reasonable choice.
Salmon terrine ingredients
- 500 g thinly sliced smoked salmon
- 500 g fillet of fresh salmon
- 200 g softened butter
- 450 g plain (thick) yogurt
- 0.5 bunch chives
- 0.5 tsp salt
- 3 pinches of freshly ground black pepper
- 2 lemon
- 1 tablespoon salt
- 1 bay leaf
- 3 grains of black pepper
- 1 tablespoon vinegar
Salmon terrine preparation
Cut lemon in half and squeeze the juice of both halves. Place on the oven bigger pan and fill it up to half with water. Add a tablespoon of salt, bay leaf and vinegar. Wash the salmon fillet under running water and then add it in the pan. Boil all together and boil for 1 minute. Then remove the pan and leave salmon fillet in water for 30 minutes to cool.
Meanwhile, prepare the dish for terrine. With slices of smoked salmon carefully arrange so that the edges of salmon fillet hang over. Finely chop the remaining slices of smoked salmon and add to the bowl. Drain well chilled salmon fillets and crush (tear with a fork) into smaller pieces, which you add to the bowl with smoked salmon.
Wash and dry chives and then finely chop. Beat butter in bowl and together with yogurt and chives add the salmon in the bowl. Stir all together, then season with salt and pepper and pour with the lemon juice. Mix the mixture again and then carefully place into the container for terrine, which was covered with smoked salmon.
Dress the mixture over the top evenly and fold over the slices of salmon, which hang over the edge. Cover this with transparent foil and place the food in the refrigerator for at least 2 hours to harden well terrine.
Remove terrine from the refrigerator and remove foil. Then cover with serving plate and turn it that all together came from the plate. Cut terrine into slices, which we serve on the plates. If desired, decorate it and enclose adjacent slices of bread or toast.
Additional tips to prepare salmon terrine
Remove butter at least one hour before use from the refrigerator.
