- 500 g puff pastry
- 1 kg of salmon fillets
- 60 g butter
- 1 lemon
- 1 tablespoon candied ginger

- 2 eggs
- 2 tablespoons olive oil
- 3 sprigs thyme
- 2 tablespoons of flour for a scattering

Salmon in puff pastry preparation
Take the butter from refrigerator and allow softening slightly. Well wash and dry salmon fillets. Remove the skin so that at the narrow end of salmon you cut into the skin with a sharp knife and gently pull down, so the skin goes off from the meat. With your fingers gently rub over the meat and check if you find any bones and with tweezers (soil) remove them. Wash the thyme sprigs. Wash the lemon and grate for the full teaspoon of lemon skin.
In a large bowl pour the butter, lemon peel, candied ginger, ground cloves and grated nutmeg. Mix well all together. Salt and pepper salmon fillets. Then, spread salmon fillets on one side with an herb butter, which we prepared. From filets make “sandwiches” so that you place two salmon fillet one on the top of other, on the sides where you spread herb butter.
On floured surface, roll out pastry to a thickness of 2 mm in the form of a rectangle. In separate bowl, separate yolks from whites. Whisk the yolks with a wire whisk. At the center of the dough place salmon “sandwich” one after the other (by length). Brush edges of dough (with a brush, fingers) with the yolks. Then the lower and upper part of the dough postpone over the salmon fillets. Fold down side edges to get a package similar shape. Turn the wrapper so that the junction is at the bottom.
Heat the oven to 200 ° C. At the bottom of the pan place a piece of aluminum foil and lightly oil it. Place on the foil salmon roll, which we cover with beaten egg and at the top with a knife, make 3 small incisions. Sprinkle over the top sesame seeds and place the sprigs of thyme. Push baker into a heated oven and bake for 30 minutes. Take baked salmon from the oven and let it rest for 5 minutes. Cut the roll into 5 cm thick slices, which are served on plates and serve.
Additional tips to prepare salmon in puff pastry
You can use whites which are left, in another dish or freeze them. Remove from the refrigerator frozen puff pastry two hours before use and let is defrost at room temperature.
The best is, if you use bio-lemon, which skin was not treated with a spray. If you don’t have bio-lemon, immerse a lemon for a few minutes into boiling water and wipe well to remove the wax, where poisons are present.
